Confetti Coleslaw with Poppysedd Dressing

1 cup thinly sliced green cabbage

1 cup thinly sliced red cabbage

1/2 cup pre-cut matchstick carrot

1 cup apple, finely sliced

1/4 cup fresh parsley, chopped

1/2 cup raw sunflower seeds

2 tablespoons cider vinegar

1 1/2 teaspoons honey

1 1/2 teaspoons Dijon mustard

1 teaspoon poppy seeds

1 teaspoon olive oil

1/4 teaspoon salt

1/4 teaspoon pepper

Prepare all of the fresh ingredients as noted and place them in a bowl. Add sunflower seeds. Add all of the dressing ingredients to a small bowl or jar and whisk well. Pour the dressing over the veggies and seeds and toss to mix. Taste and season with additional salt and pepper as desired. Refrigerate until ready to serve.
